These protein balls are a total hit with everyone. I shared some with the lovely ladies at last Fridays coffee morning training class and they loved them...they all asked for the recipe so I promised I would share it here.
My kids think they are delicious and genuinely think of them as a treat, yet they are full of the good stuff and don't contain any refined sugar and don't turn them hyper! They only take 5 minutes to make so why not give them a go...
Ingredients
120 g fresh pitted dates (about 6 Medjool dates)
1 cup rolled oats
1/2 cup desiccated coconut
1 tablespoon Pulsin Pea Protein Powder (optional - they do work without)
150 g peanut butter (I have also done with Almond or Cashew butter or a mix)
a little water to mix if needed
Method
Combine dates, oats, coconut and protein power in a food processor until the mixture looks like crumbs and the dates are well mixed
Remove the mixture and place into a large bowl
Add the nut butter and mix through until combined, adding more water if needed to mix into a dough.
Roll into balls using tablespoon sized portions then put into an airtight container in the fridge
